Zero Waste Strawberry Scones 


🍓🍓 0w strawberry scones! It’s difficult, but not impossible to find strawberries packaged in paper cartons and not plastic clamshells. I’ve had luck at Sigona’s Market in Redwood City.

Ingredients:

  • 2 cups strawberries cut into little pieces
  • 2 cups all organic flour
  • 3 tbsp sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 egg
  • 6 tbsp butter, cold, cut into cubes
  • ⅔ cup milk

Instructions:

Preheat oven to 400F

Mix flour, sugar, baking powder and salt together in a large bowl. Mix in the butter and cut into it with your hands until the flour forms into small pea sized balls. Add the strawberries until coated evenly with flour.

In a separate bowl, mix the eggs and milk together, then fold into the flour mixture. Flour your hands and mold the dough into a ball, then flatten so it’s about a 2″ thick circle. Cut into 8 slices and place pieces on a lightly greased baking sheet.

Bake for 35-40 minutes or until golden brown and cooked through.

In a air tight  container they last for 5-7 days at room temperature. 10 days in the fridge.
