Zero Waste Chocolate Chip Walnut Zucchini Muffins

These chocolate chip zucchini muffins were invented as a way to switch up normal zucchini bread.  All items are easily found as loose produce, in the bulk aisle, or in glass or cardboard containers. So there’s no need for plastic packaging at any point for this recipe!

Ingredients:

  • 1 and 1/4 cup flour
  • 3/4 cup sugar
  • 1 tspn cinnamon
  • 1 tspn baking soda
  • 1/2 tspn salt
  • 1 egg
  • 3/4 cup canola oil
  • 1 tspn vanilla extract
  • 1/2 cup milk or almond milk
  • 1 zucchini, shredded
  • 1/2 cup walnuts
  • 1/2 cup chocolate chips

 

Directions:

1.)  Preheat oven to 350F

2.) Combine flour, sugar, baking soda, cinnamon and salt into a bowl. Mix until blended.

3.) In a separate bowl, combine oil, milk, vanilla and egg. Mix wet into dry ingredients. Fold in zucchini, walnuts and  chocolate chips.

4.) Grease your muffin tin and fill 3/4 of the way full with batter.

5.) Bake for 25 minutes or until a tooth pick can be inserted into the center of the muffin and comes out clean.
