Dandelion Salad with Honey Mustard Dressing

Ingredients:

  • 4 cups fresh dandelion greens, washed and dried
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup shaved Parmesan cheese or vegan parm!
  • Salt and freshly ground black pepper, to taste

For the Honey Mustard Dressing:

  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey (vegan: agave nectar)
  • 3 tablespoons apple cider vinegar
  • 1/4 cup extra-virgin olive oil
  • Salt and freshly ground black pepper, to taste

Instructions:

Step 1: Prepare the Dandelion Greens

  1. Begin by thoroughly washing the dandelion greens under cold running water to remove any dirt or debris. Shake off excess water and pat dry with a clean kitchen towel or salad spinner.
  2. Trim any tough stems from the dandelion greens and discard. Tear the leaves into bite-sized pieces and place them in a large salad bowl.

Step 2: Toast the Almonds

  1. In a small dry skillet over medium heat, add the sliced almonds.
  2. Toast the almonds, stirring frequently, until they are golden brown and fragrant, about 3-4 minutes. Be careful not to burn them.
  3. Remove the toasted almonds from the skillet and transfer them to a plate to cool.

Step 3: Prepare the Honey Mustard Dressing

  1. In a small bowl, whisk together the Dijon mustard, honey, and apple cider vinegar until well combined.
  2. Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.
  3. Season the dressing with salt and freshly ground black pepper to taste. Adjust the sweetness or tanginess by adding more honey or vinegar, if desired.

Step 4: Assemble the Salad

  1. Pour the honey mustard dressing over the prepared dandelion greens in the salad bowl.
